Thick and Creamy Corn-Potato Soup
6 ears corn (cut off the cob)
6 medium-large red potatoes (chopped in 1/2 inch pieces)
6 carrots (finely chopped)
1 medium-large onion (finely chopped)
2 green peppers (finely chopped)
2 bay leaves
3 teaspoons thyme
2 teaspoons marjoram
3 teaspoons cumin
2 teaspoons sea salt
2 teaspoons pepper
3 32oz. boxes of vegetable broth
Water, as necessary

Put vegetables and spices in a large soup pot. Cook on medium heat, stirring occasionally for 15 minutes. Add broth and maintain a light boil. Cook 45 minutes to 1 hour. Remove from heat. Blend 3/4 of the soup mixture in a blender in batches. Put blended soup in a large bowl or container until the blending process is complete. Pour the blended soup back into the pot. Add water to thin and obtain the desired consistency. Heat through and serve. Serves 8-10 generously.

Tomato Basil Soup
12 Vine Ripe Tomatoes
1 Package Cherry Tomatoes
2 1/2 Cups Fresh Carrot Juice (or Odwalla available in juice section)
1 Large Ripe Avocado
2 Yellow Onions (chopped)
4 Cloves Garlic (chopped)
5 Stems Fresh Basil
2 Tablespoons Pure Honey
1 Bay Leave
1 teaspoon Oregano
1 teaspoon Sea Salt
1 Tablespoon Red Pepper Flakes
2 Tablespoons Olive Oil

Cook onion and garlic in olive oil until tender. Cut tomatoes and avocado in quarters and place all ingredients in blender and blend on low speed for one minute. Continue to blend on high for an additional minute until creamy. Pour into large soup bowl or crock pot and cook on medium low for 2 to 3 hours.

Portabello Steaks
6 portabello mushroom caps
1/2 cup fresh squeezed lemon juice
2 tablespoons apple cider vinegar
2 tablespoons Pure Maple syrup
2 teaspoons fresh grated ginger
1/2 teaspoon marjoram

Wash mushrooms and place in a gallon size plastic sealable bag. Combine remaining ingredients in a bowl and stir to combine. Add to the mushrooms and marinate for a few hours. Grill indoors or out until cooked through.

Serve with baked sweet potatoes and grilled squash and asparagus.

Grilled Vegetables
Toss yellow squash, zucchini, and asparagus with 2 tablespoons extra-virgin olive oil. Salt and Pepper to taste. Grill indoors or out until tender.

Baked Sweet Potatoes
Wash sweet potatoes, prick with a fork several times and place in a 400 degree oven for an hour and a half. Less time may be needed if potatoes are small.

Vegetable Barley Soup
Choose your vegetables. Really, anything can work depending upon your taste.

Some possibilities:
3 cups chopped celery
2 cups chopped white onion
3 cups chopped carrots
3 cups chopped green/yellow/red pepper
3 cups thin sliced mushrooms
2 cups chopped roma tomatoes (peeled and seeded)
2 32oz. boxes vegetable broth

Use your favorite spices. Some possibilities: 2 cloves garlic, sea salt to taste, 2 teaspoons marjoram flakes, 2 teaspoons oregano flakes, 1 bay leaf and 1 teaspoon parsley. Pour ¼ cup vegetable broth in a soup pot. Add all of the vegetables and saute them until tender. Add the spices and stir to mix. Add the remaining vegetable broth. Bring to a boil and add 1 cup Natural Whole Grain Barley. Boil for 15-20 minutes until the barley is tender.

Serves 6

For thicker soup, just blend 1/2 of the vegetable mixture (prior to putting in the barley) in a blender. Add it back to the soup pot and then add the barley.

Guacamole
Blend ripe avocados in a food processor with juice from 1 large lime, 2 cloves garlic, 1 roma tomato and a dash of salt. If you like spice, you can add 1/4 of a jalapeno pepper seeded.

Serve on black beans, portobello mushrooms or use as a dip with vegetables.

Baked Apples or Pears
Slice a pear or apple in half. Use a grapefruit spoon to scoop out the seeds and the tough, center portion. Place halves, skin side down, in a glass baking dish. Brush with ½ teaspoon pure maple syrup and sprinkle with cinnamon. Microwave for 10 minutes or until tender. Serve warm.

The Breaker’s Granola
5 cups raw oatmeal
1 cup finely chopped walnuts
1 cup slivered raw almonds
1 cup finely chopped cashews
1 cup unsalted sunflower seeds
1/2 cup flax seed
1 cup finely chopped dry figs
1 cup finely chopped apricots (unsweetened if possible)
1/4 cup chopped coconut
2 cups unsweetened raisins
2 Tablespoons cinnamon

Mix together in a large bowl. Keep in tightly sealed container such as tupperware in the pantry. To serve cold, soak 1/2 cup granola in unsweetened plain soy milk for a few minutes. To serve warm, you can prepare with water or unsweetened soy milk in the microwave. Use 1 cup liquid to 1/2 cup granola. Warm for a minute on high or more if desired.

Note: Chop the nuts and fruits in a food processor individually and then add them to the oats.

Gazpacho
6 med. tomatoes, quartered
2 large cucumbers
1 small red onion
1 med. zucchini, chopped
3 med. garlic cloves, smashed
1 med. green bell pepper
Chopped fresh herbs: parsley, basil, chives
2 Tbsp. lemon juice
2 Tbsp. extra virgin olive oil
1 tsp. sea salt
1 tsp. cayenne pepper
1 tsp. ground cumin seed
2 cups vegetable stock or tomato juice

1. In food processor, combine tomatoes, cucumbers, onion, zucchini, garlic, and green pepper and process on high until coarsely chopped.

2. Add herbs, lemon juice, oil, salt, cayenne, and cumin. Process a few more burst. Blend in stock or tomato juice.

3. Transfer to large bowl. Refrigerate at least 1 hour before serving.

Serves 4. Preparation Time:10 minutes.

Vegetarian Spaghetti Squash
Slice squash in half lengthwise. Scoop out the seeds with a spoon as you would a pumpkin. Then completely submerge both halves in boiling water and cook for about 20 to 25 minutes, or until the inside is tender to a fork and pulls apart in strands. (It is better to undercook if you are not sure). Remove, drain, and cool with cold water or an ice bath to stop the cooking. Then use a fork to scrape the cooked squash out of its skin, and at the same time, fluff and separate the squash into spaghetti-like strands. Discard the skin. Reheat the squash strands by dipping with a strainer in boiling water just before serving.

You can also bake the spaghetti squash in the oven. Just scoop seeds out as described above and prick outside skin with a fork. Place skin side up in a baking pan with 1 inch water. Bake 45 minutes or until tender in a 400 degree oven. Remove and allow to cool for a few minutes until they can be handled. Scrape with a fork as mentioned above and serve with stir fried sauce.

Stir Fried Sauce
10 Roma tomatoes, peeled, seeded, and chopped coarsely
2 cups thinly sliced mushrooms
2 cloves garlic
2 cups chopped broccoli florets or 1 package baby spinach
2 teaspoons oregano (powdered or flakes)
Sea salt to taste

Saute mushrooms and onion with garlic and oregano. Add tomatoes and other vegetables. Cook until tender and heated through. Toss in a large bowl with spaghetti squash strands.

Serve hot. 6 servings

Brown Rice with Edamame and Vegetables
2 cups brown rice
4 cups water or vegetable broth
1 cup fresh squeezed orange juice
1 package frozen, shelled edamame
1 cup shredded carrots
1 cup sliced white mushrooms
½ teaspoon cumin
1 clove garlic minced
½ cup chopped green onion

Combine orange juice and water/broth in a saucepan and bring to a boil. Add brown rice and bring back to a boil. Cover and reduce heat to low. Simmer for 45 minutes to 1 hour. Remove lid to let steam escape and set aside.

While rice is cooking, prepare edamame according to package directions but without salt. Drain in a sieve. Saute garlic, cumin, mushroom and carrot just until tender (do not overcook). Put rice in a large bowl and add the edamame and other vegetables. Top with chopped green onion.

Servings:4-6 entrée size

Serve with orange slices and celery sticks.

Cuban Black Beans & Rice with Tomato Salsa
1 package dried black beans
Vegetable broth (1- 32oz. box)
Chili powder
Chipotle powder
2 cloves garlic

Soak beans overnight in water (cover w/2 inches above beans). Drain and rinse beans. Place beans in sauce pan and add vegetable broth. Add water to cover if needed. Add spices and boil for 1 hour and then simmer until tender (follow package direction if available). Prepare brown rice according to package directions.

Salsa
Roma Tomatoes quartered
Lime
Cilantro
Green onion (1 bunch)
Chili powder
Cumin
Garlic

In a food processor, chop tomato, cilantro, green onion with chili powder, garlic, cumin and lime juice by pulsing the blade several times to desired texture. We prefer chunky.

Place rice on individual dishes and top with beans and salsa.

Serves: 6 entrée size

Serve with sliced mango and papaya and lime juice.

Toasted Nut Snack
Pre-heat oven to 400 degrees. Place raw walnuts, almonds, cashews or other desired nuts on a baking sheet. Bake for 15 minutes or until slightly browned. Cool completely and mix in a bowl with unsweetened raisins.

Keep this on the counter for a quick snack.

Lentil Bowls

3 C water
1 C lentils
1 onion, chopped
1 glove garlic, minced
1 bay leaf
Salt, to taste

Toppings: Cooked brown rice (instant brown rice works) Shredded lettuce, Diced tomatoes, chopped green onions, sliced olives.

Bring first column of ingredients to a boil, then reduce heat and simmer for 45-60 minutes, or until thickened and lentils are tender. Remove bay leaf. Place lentils in individual bowls. Place the toppings in individual serving bowls.

Each person chooses toppings and makes their own lentil bowl.

Serving suggestion: Top with tomato sauce, guacamole or fresh lemon juice and garlic salt.

Tomato sauce

1 C fresh or canned tomatoes
1 carrot cut in chunks
2 pitted dates, minced
1 small onion, chopped
1/8 t salt
Pinch of sweet basil
Pinch of oregano

Blend tomatoes, carrot and dates until desired consistency is obtained. Pour into a saucepan and add remaining ingredients. Simmer 15 minutes. (Doesn’t taste quite like the tomato sauce most of us are used to-but try it you might like it

Guacamole

2 ripe avocados
2 T chopped tomato
1 T fresh lemon juice
2 t chopped onion
1/2 t salt
Garlic powder, to taste

Blend or mash avocados until smooth. Stir in remaining ingredients. Keep refrigerated in an airtight container. Use within 24 hours.

Tip: When storing in refrigerator, cover surface of Guacamole with a thin layer of lemon juice, to prevent browning. Pour off or stir in when ready to serve.

One: Unexplainable Wonders

• Luke 5:4-11 When He had stopped speaking, He said to Simon, “Launch out into the deep and let down your nets for a catch.” 5 But Simon answered and said to Him, “Master, we have toiled all night and caught nothing; nevertheless at Your word I will let down the net.” 6 And when they had done this, they caught a great number of fish, and their net was breaking. 7 So they signaled to their partners in the other boat to come and help them. And they came and filled both the boats, so that they began to sink. 8 When Simon Peter saw it, he fell down at Jesus’ knees, saying, “Depart from me, for I am a sinful man, O Lord!” 9 For he and all who were with him were astonished at the catch of fish which they had taken; 10 and so also were James and John, the sons of Zebedee, who were partners with Simon. And Jesus said to Simon, “Do not be afraid. From now on you will catch men.” 11 So when they had brought their boats to land, they forsook all and followed Him.

Two: The Wonder of Creation and Life

• Creation of Life:

Three: Joy and Wonder

• Nehemiah 8:10 “Do not sorrow, for the joy of the LORD is your strength.”
• Psalm 16:11”In Your presence is fullness of joy”
• John 15:11 “These things I have spoken to you, that my joy my remain in you, and that your joy may be full.”
• Consider some amazing moments of God’s deliverance:
• From Egypt:
• Exodus 3:20 “So I will stretch out My hand and strike Egypt with all My wonders which I will do in its midst, and after that He will let go.”
• Psalm 105:43 “He brought out His people with joy, His chosen ones with gladness.”
• Paul and Silas:
• Acts 16:25-26 “But at midnight Paul and Silas were praying and singing hymns to God . . . Suddenly there was an earth quake . . . all the doors were opened and everyone’s chains were loosed.”
• C.S. Lewis:
• In his autobiography Surprised by Joy, Lewis ascertains that God used moments of joy and then a longing for joy to draw him to God, finally realizing that joy was not so much a thing but a Person, the Person of Christ.1
• David:
• Psalm 51:12 “Restore unto me the joy of your salvation.”

Four: Restoration of wonder

• The older you get, the more it takes to fill your heart with wonder, and only God is big enough to do that. – Ravi Zacharias
• Christians have the privilege:
  • To believe in a God of miracles.
  • To believe in a God who wondrously provides for every need.
  • To expect God to work on their behalf.
  • To declare His wonders and glory.
• Psalm 96:3 “Declare His glory among the nations, His wonders among the peoples.”
• Psalm 145:4 “One generation shall praise Your works to another, and shall declare Your mighty acts.”
• Christians have the authority:
  • To encounter the wonders of God even in the minute details of daily living.
  • To experience God’s wonders in what others might perceive as odd coincidences.
  • To confront the obstacles and problems of life by throwing themselves on God’s mercy and miraculous deliverance.
  • To overcome every attack of the devil by seeking the fullness of joy that comes from being in the presence of our wonderful and mighty God.

Five: Sharing the wonder

• Acts 3:6, 9-10 Then Peter said, “Silver and gold I do not have, but what I do have I give you: In the name of Jesus Christ of Nazareth, rise up and walk.” . . . 9 And all the people saw him walking and praising God. 10 Then they knew that it was he who sat begging alms at the Beautiful Gate of the temple; and they were filled with wonder and amazement at what had happened to him.
• There’s the wonder of sunset at evening, the wonder as sunrise I see; But the wonder of wonders that thrills my soul is the wonder that God loves me. – George Beverly Shea

1. To prepare us.

2. To test us.

a. Deuteronomy 8:2—God led you through the wilderness for forty years…testing you to find out how you would respond and if you would obey Him.  (LB)

II. Four things not to do when your faith is being tested:

A. Don’t Fear.

1. Deuteronomy 1:26, 28–…They would not enter the land.  They said…We are afraid…The people there are stronger and taller than we are…(GN)

2. Isaiah 41:10—Fear not, for I am with you.  Do not be dismayed.  I am your God, I will strengthen you and I will help you…and uphold you…(LB)

B. Don’t Fret.

1. Numbers 21:4-5—On the way the people lost their patience and spoke against God and Moses.  They complained…(GN)

2. Proverbs 19:2—Impatience will get you into trouble. (GN)

3. Psalm 37:7-8—Rest in the Lord; wait patiently for Him to act…Don’t fret and worry—it only leads to harm.  (LB)

4. Ecclesiastes 3:11—God has set the right time for everything. (GN)

C. Don’t Faint.

1. Numbers 14:2-4—All the Israelites grumbled against Moses…If only we had died in Egypt…We should choose a leader and go back to Egypt.

2. Galatians 6:9—Let us never grow tired of doing what’s right, for if we do not faint, we’ll reap a harvest at the right time.  (Moffats)

3. Luke 18:1—You need to pray continually and not lose heart. (JB)

4. Isaiah 40—They that wait upon the Lord, shall renew their strength.  They shall mount up with wings as eagles.  They shall run and not be weary.  They shall walk and not faint.

D. Don’t Forget

1. Psalm 106:7-8,13—They forgot the many times God showed them his love, and they rebelled…at the Red Sea.  But He saved them as He promised…But they quickly forgot again!  They wouldn’t wait for God to act. (GN)

2. Psalm 103:2—I will bless the Lord and not forget the great things He does for me.  (LB)

3. 2 Peter 3:3-8—The Lord is not being slow to carry out His promises…but He is being patient with you…(JB)

4. Habakkuk 2:3—These things won’t happen right away.  Slowly, steadily, surely, the time approaches when the vision will be fulfilled.  If it seems slow, do not despair. For these things will surely come to pass.  Just be patient!  They will not be overdue a single day!  (LB)

What to do in times of Trouble.

#1 Tell God how you feel.

• Lamentations 2:19-Cry out in the night…Pour out your heart like water in prayer to the Lord. (NCV)
• Job 7:11-I can’t be quiet. I’m angry and bitter. I have to speak! (TEV)
• Psalm 116:10-I believed, so I said, I am completely ruined! (NCV)
• First because I believe that there is a God.
• Second because I believe that He listens to my prayers.
• Third because I believe that He will let me say what I need to say and He will still love me.
• Psalm 116:10-I kept on believing even when I said, I’m completely crushed. (Good News)

#2 Praise God in spite of the circumstances.

• Job 1:21-22-Job said, I was born with nothing, and I’ll die with nothing. The Lord gave, and now He has taken away. May His name be praised! In spite of everything that had happened, Job did not sin by blaming God. (TEV)
• What can you praise God for:
  • That He is a good and loving God.
  • • Job 10:12-You’ve given me life and constant love and Your care has kept me alive.
    • Romans 8:38-39-I am convinced that nothing in all creation can separate us from the love of God. Not life, not death, not angels, not demons, not our fears for today or our worries about tomorrow. Not even the powers of hell can separate us from the love of God.
  • That He is all-powerful.
  • • Job 36 says that God’s power is unlimited and we can’t even comprehend the greatness of God’s power.
  • That He notices every detail of my life.
  • • Job 23:10-He knows the details of what are happening to me. He sees everything I do. He watches every step.
  • That He is in control.
  • That He has a plan for my life.
  • • Job 23:14-He will fulfill what He has planned for me.
  • That He will protect me.
  • • Job 5:11–…those who mourn are lifted to safety. (NIV)
    • Job 5:11-He raises up the down-and-out, gives firm footing to those sinking in grief. (Message)
    • Habakkuk 3:17-18-Though the fig tree may not blossom, nor fruit be on the vines; though the labor of the olive may fail, and the fields yield no food; though the flock may be cut off from the fold, and there be no herd in the stalls. Yet I will rejoice in the Lord, I will joy in the God of my salvation. (NKJV)
    • Romans 12:21-Do not be overcome by evil, but overcome evil with good. (NKJV)
    • Matthew 6:13-Deliver us from evil.
    • Job 13:15-Though He slay me, yet will I trust in Him. (KJV)

#3 Ask God for strength and help.

• Psalm 105:4-Look to the Lord and His strength. (NIV)
• Job 12:13-God is the real source of wisdom and strength. (CEV)
• Psalm 3:5-I can lie down and to go sleep and I can wake up again because the Lord gives me strength. (NCV)
• Psalm 37:39-The Lord saves good people; He is their strength in times of trouble. (NCV)
• Psalm 63:2-So here I am in the place of worship, eyes open, drinking in Your strength and glory. (Message)

#4 Keep your eyes focused on God and His promises.

• 2 Corinthians 4:16-18-Therefore, we do not lose heart for our light and momentary troubles are achieving for us an eternal glory that far outweighs them all. So we fix our eyes not on what is seen, but on what is unseen. For what is seen is temporary, but what is unseen is eternal. (NIV)
• Three reasons we don’t get discouraged and lose heart:
  • We know that all troubles are temporary-they don’t last.
  • We know that God is using them for a greater eternal purpose.
  • We are keeping our eyes on God.
• John 16:33-By trusting Me, you will be unshakable and assured, deeply at peace. In this godless world you will continue to experience difficulties. But take heart! I’ve conquered the world. (Message)
• Hebrews 12:28-Do you see what we’ve got? An unshakable kingdom! And do you see how thankful we must be? Not only thankful, but brimming with worship, deeply reverent before God! (Message)

The fundamental question of your life:

1. What is the foundation that you’re building your life on?
2. Is it unshakable?
3. Are you trusting in your career, your popularity, your reputation, your family, your government, your finances?

In Times of Trouble:

1. Tell God how you feel.
2. Praise God in spite of the circumstances.
3. Ask God for strength and help.
4. Keep your eyes focused on God and His promises.
